Tom Yum Soup
Another spicy and sour soup, dom yam soup is widely served in Southeast Asian countries. The name "Tom" means soup in Tai language spoken by Thai and Lao. "Yam" means spicy and sour.
Ingredients (Serves 2)

6 fresh prawns with shell

4 mussels
-
75g fresh squid

1 medium tomato, peeled & deseeded

400ml of water

1/4 teaspoon tamarind paste (optional)

1/2 red chilli
-
1 spring onion
Seasoning

1/3 teaspoon salt
-
1/2 teaspoon fish sauce (optional)

1/4 teaspoon white-ground pepper

1/3 teaspoon sesame seed oil

Method

Wash and dry the prawns, mussels and squid. Cut the squid in 4cm squares and score the surface slightly vertically then again horizontally.

Peel the tomato and deseed then dice into small pieces.

Remove seeds from chilli and cut the chilli in rings. Cut the spring onion into 2cm lengths.

Boil the water in saucepan and add all the ingredients and simmer for 3 minutes. Add salt, ground white pepper and sesame seed oil to taste. Serve at once.
